You must try cacao, its the new healthy high!

Have you tried cacao yet? it is amazing and the new healthy trend that is taking the UK by storm.

Raw Cacao (pronounced Ka-cow)

It is made by cold-pressing unroasted cocoa beans. The process keeps the living enzymes in the cocoa and removes the fat (cacao butter), you can get it in various forms, nibs ( like little chocolate chips), beans, powder and in blocks. It is the purest form of chocolate you can get.

What better than pampering yourself with a hot chocolate made with Sicilian orange oil, cacao, almond milk and maple syrup.

It’s blumming delicious!

using only 3 ingredients, cacao powder, ground almonds and medjool dates, so simple and tastes like heaven!

Vegan Caramelised banana with candied walnuts and lemon sorbet

We have been very blessed by Mark Hartstone, chef proprietor at La Fosse at Cranborne  for sending us a special vegan recipe to share with you.

The restaurant has a special vegan and vegetarian theme night coming up on 14th July, pop over to book your place.

The great thing about this recipe is that it is almost entirely from store cupboard ingredients.

Other than the sorbet the dish can be put together whilst your dinner guests are digesting their main

course! The walnuts can be prepared in advance along with the sorbet, however the caramel on the

banana will dissolve into the fruit and therefore must be done at the very last minute.

Energy boosting Raspberry & cacao smoothie

When you get that afternoon slump instead of grabbing a bar of chocolate blend up an energy boosting smoothie, if you go out to work, make it in the morning and take it with you just make sure you keep it chilled at work. Simple to make and tastes like velvet, you will get a buzz from the cacao and baobab which will last a lot longer than a bar of chocolate.

Easy dairy and meat free lasagne recipe

Easy dairy free and meat free lasagne recipe, serves 6.

You will need:

Packet of lasagne sheets (these can be gluten free if you wish)

Tin chopped tomatoes

Bag of quorn mince (or vegan option could be green lentils)

2 large cloves of garlic

1 onion

Salt, pepper, chilli flakes, paprika, mixed dried herbs such as oregano, thyme, sage, marjoram etc (fresh works great too)

Coconut oil

1 Aubergine

Potatoes

Wild garlic oil ( any flavoured oil would work, even plain olive oil)

Flour, dairy free marg, nutmeg (optional), non dairy milk, kale, garlic clove, coconut oil for the topping and side serving.

Conscious Camp 2016

Feeling so grateful and full of love. I have just returned from Conscious camp.

First time camping at this amazing gathering of beautiful souls in Wales we had fun, dancing, bathing and swimming in the river, going to awesome workshops, attending yoga each morning at 8am, listening to inspiring talks, eating amazing vegan food and having a profound heart opening experience.

It was 4 days of bliss, being with like minded people, no alcohol, no smoking, no stinky perfume, just free, natural beings who smile. I could of easily lived there, the river was lovely but pretty cold, we bathed in it and washed our hair, had deep chats whilst fish swam by us. The vegan food was so tasty and it was lovely not to cook and not to worry what am I going to eat because I knew it was all lovely food. Stories and songs around the fire at night, chanting and a lovely way to make each single person feel special. We sang to each person “Ruby (or their name) we love you, deep down in our soul, Ruby we love you deep down in our soul, deep down, deep down, deep down in our soul” the feeling of love, friendship and gratitude was palpable. Not having to do anything you didn’t want and knowing you are provided for and cared for was a beautiful experience.

I didn’t miss facebook at all and felt less stressed and my back muscles didn’t ache at all. I didn’t sleep well at night, I was really cold despite a sleeping bag, blanket, pj’s, hat and onsie! But what I did love was waking up naturally to the birdsong and sound of the river, rather then squarking chickens, whinging dogs and traffic noises. I can’t wait to live in the countryside and breathe in the pure air and be surrounded by lush green fields.

Foraging for wild garlic

Yesterday we went foraging for wild garlic in our local woodlands, within walking distance from Blackpool town centre, the leaves are vibrant and the flower buds are aching to open. It’s the perfect time of year to collect some leaves and turn them into garlic delights. Remember the foraging code though, only take what you need, I only take 2-3 leaves from each plant to leave enough for healthy growth.

Hearty vegan stew recipe

You know when it still cool in the evenings right before spring is truly here?

You need comfort food, something like a hug in a bowl, I have tried many times to recreate my mums beef stew without the beef and finally I have made this hearty concoction that fills the brief. Add dumplings to make it even better!

I give you my best vegan stew for 24p a bowl, whats not to love and I guarantee meat eaters will love it too – I tested some haha.

Vegan wild garlic soup feed 3 for 38p!

This is the best time of year to start foraging for wild garlic, its deep green shoots and leaves are growing steadily in woodlands around the UK, the strong smell you get as you walk by, wafts through the woods and forests giving a heady scent of garlic and you know spring is here.

Grab yourself a handful, from the middle of the patch is best, the edges tend to have dog wee on them, I take a few leaves from a few different plants, that way you give the plants chance to keep growing at the same rate, take scissors and snip them off, tearing the leaves isn’t great. Don’t dig up the plants either! leave some for other people too.

Today I made this delicious lunch, my partner Tom has gone onto a low fodmap diet to try and sort out his gut, so we have been experimenting with food and trying new combo’s. I have only used quinoa (pronounced keen-wa) once before a long time ago, because its £5.99 a bag which is a lot when you are feeding teens and 2 adults, but with its limited foods for the diet we have bought some, so here goes:
